How did you mix your biscuit cream?
The cream can be mixed in batch or continuous equipment. The difficulty of working with soft, sticky, lumpy and messy creamers has led to more interest in using continuous mixing systems for biscuit creamers, although many of their problems are very similar.
Batch systems usually start with lumps or pumped quantitative fats. The bulk operation of malleable fats with steep melting curves needs to be tightly controlled because even small changes in temperature can significantly alter their consistency. When sugar and other ingredients are added, the temperature of the overall mass is lower than that required for the mixed cream. 
By whipping and mixing, the material is slowly heated and air is incorporated. At the end of mixing, the cream should have the desired temperature, density and consistency. It is difficult to precisely control these three interrelated properties (though consistency is difficult to define) without paying close attention to the temperature and the quality of the ingredients. The permissible range of properties depends on the type of cream spreader and the type of fat used. 
It is feasible to regularly monitor the properties of the creamer and correlate its changes with the performance of the creamer and the control of the biscuit weight.
The density of the cream is from 0.75 to 1.15g/cm, etc. , low density cream is used in injection molding machines, while the highest density cream is used in extrusion and wire cutting molding machines. However, the cream has to be pumped some distance to reach the cream applicator, so the cream is subjected to considerable pressure, and when this pressure is released, it will be difficult to maintain an evenly aerated cream. The lower the cream density, the greater the volume per sandwich biscuit for a given weight. So for consumers, the cream seems to be more. But for producer, they save the cost of cream. 
Continuous mixer is very similar to a fat chill plasticizer, and the equipment must be able to accommodate the super cooling of the fat. The system requires pressure to transport the fat to the cream applicator and back around the closed loop trunk, but this creates aeration and density uniformity issues. This is because the air bubbles are small under pressure, and when the cream is released into the hopper of the cream machine with the agitator it grows and connects. Therefore most such cream handling systems only deliver high density cream to the sandwich cookie machine.
Due to the grinding sugar, significant wear and oil seal issues can occur when pumping oil and sugar mixtures. Edible oil is usually injected into the seals under pressure to prevent leakage of the cream mix, thereby protecting the bearings and seals.
The continuous mixer is preferably run at a constant speed and provides the prepared cream in a closed system. The closed system must be returned to the supply tank containing all the cream ingredients. The returned cream must be completely melted for reprocessing. Otherwise, the cream will change in quality such as fat crystal form and gas-filled structure.
There are a number of factors to consider when cleaning this cream system. If the same flavor and color of cream is used all the time, cleaning is not necessary; after a production run, it is sufficient to raise the temperature of the pipe jacket and discharge the residual material into a container for storage. However, if thorough cleaning is required, the system should be flushed with hot water and allowed to dry. Another method is to use a special tube cleaner to thoroughly clean the tube after one cream has been used before applying another cream.
